Perché si festeggia San Giuseppe?
Questo giorno, noto anche come la “Festa del papà”, ha origini religiose: una festività dedicata a Giuseppe in segno della sua protezione nei confronti di sua moglie Maria e il figlio adottivo Gesù. Esso guidò la Sacra famiglia nella fuga in Egitto per sfuggire dalle furie di Erode il Grande, che ordinò di uccidere tutti i bambini della zona (evento ricordato come la “strage degli innocenti”). Nel 1621, Papa Gregorio XV estese la festa di San Giuseppe a tutta la Chiesa. Già nel 1870, Papa Pio IX dichiarò Giuseppe “Patrono della Chiesa universale”. Per molti decenni, il 19 marzo è stato un giorno di precetto nella Chiesa, ovvero si doveva andare a Messa. Da alcune fonti, sembrerebbe che il 19 marzo sia la data della morte di Giuseppe, ma non si hanno notizie certe.
Com’è nata la festa del papà?
La festa del papà è festeggiata in molte parti del mondo, ma viene celebrata il 19 marzo solo nei paesi a tradizione cattolica, in concomitanza con la festa di San Giuseppe, padre adottivo di Gesù, che come detto in precedenza guidò la Sacra famiglia verso la loro salvezza. Quindi non in tutti Paesi la festa del papà viene festeggiata il 19 marzo, in Russia per esempio, si festeggia il 23 febbraio.
Zeppole di San Giuseppe: il dolce tipico della festa del papà.
La “zeppola di San Giuseppe” è un dolce tradizionale della pasticcera napoletana, preparato con modalità leggermente diverse nelle varie regioni dell’Italia meridionale. Vengono preparate generalmente nel periodo di San Giuseppe (19 marzo) tanto da essere un dolce tipico appunto della festa del papà. Le preparazioni base per questa ricetta sono la pasta choux (tipica per la preparazione dei bignè) e la classica crema pasticcera. Nella tradizione napoletana esistono due varianti di zeppole di San Giuseppe: fritte e al forno. In entrambi i casi le zeppole hanno forma circolare con un foro centrale dal diametro di 2 cm circa e sono guarnite ricoprendole di crema pasticciera con sopra delle amarene sciroppate. Alcune pasticcerie provvedono anche alla farcitura interna della zeppola con tale crema, discostandosi dalla tradizione.
Due leggende legate all’origine delle zeppole:
La prima, di matrice cristiana, farebbe risalire la nascita delle zeppole alla fuga in Egitto della sacra famiglia. Si dice che San Giuseppe, per mantenere Maria e Gesù, dovette affiancare al mestiere di falegname quello di friggitore e venditore ambulante di frittelle.
Sembrerebbe che a Napoli, per una sorta di devozione al Santo, ad un certo punto si sia sviluppata la tradizione degli zeppolari di strada. Fino a qualche anno fa, per i vicoli della città, ci si poteva imbattere in questi artigiani che si esibivano pubblicamente nella loro arte su banchetti posti davanti alle loro botteghe dove vendevano le zeppole appena fatte.”
“Una seconda leggenda ci condurrebbe a Roma, invece, durante le “celebrazioni delle Liberalia” feste organizzate dai romani in onore delle divinità dispensatrici del vino e del grano.
Durante queste feste, che si celebravano il 17 marzo, per omaggiare Bacco e Sileno suo precettore e compagno di bagordi, si bevevano fiumi di vino e ambrosia accompagnati da profumatissime frittelle di frumento, cotte nello strutto bollente. Con l’avvento dell’Imperatore Teodosio II, che proibì qualsiasi culto pagano, cessarono anche le Liberalia. Tuttavia è probabile che, nel tempo, esse siano state assimilate dal cattolicesimo che fissò due giorni più tardi la festa di San Giuseppe che, nel 1968, divenne il giorno dedicato alla festa del papà. Le zeppole che oggi portano il nome del santo, altro non sarebbero che le discendenti delle antiche frittelle romane.”

Il 19 marzo è una data particolare anche per un altro motivo. Questo giorno, posto a ridosso della fine dell’inverno, sembra che si potesse ricollegare ai tradizionali riti di purificazione agraria dell’Italia meridionale, durante i quali si accendevano dei falò che divevano il fulcro di danze per festeggiare l’equinozio di primavera, condividendo con la comunità proprio delle frittelle ricoperte di miele. Ricetta
Ecco per voi, la ricetta delle zeppole di San Giuseppe che ci è stata gentilmente offerta da Mary, una giovane food blogger di Pozzuoli (NA), nella sua versione con la cottura al forno. La ricetta la potete trovare anche nel suo blog: “Sweet moments ricette”
Ingredienti per la pasta bignè:
150 g di farina 00
150 ml di acqua
120 g di burro
4 uova
1 pizzico di sale
Ingredienti per la crema:
500 ml di latte
250 g di zucchero
4/5 tuorli d’uovo
50 g di farina 00
50 g di burro o margarina
1 bustina di vanillina o aroma vaniglia
Ingredienti per decorare:
Zucchero a velo q.b.

Procedimento:
Prepariamo insieme le zeppole di San Giuseppe, prima di tutto preparate la pasta bignè: in un tegame portate ad ebollizione l’acqua, il burro e un pizzico di sale, quando incomincia a bollire, versate rapidamente la farina mescolando con un cucchiaio di legno e quando si stacca dai bordi, spegnete il fuoco. A questo punto, fate intiepidire e incorporate al composto le uova a filo e mescolate con una frusta o in planetaria. Una volta pronta la pasta bignè, con l’aiuto della sac a poche con beccuccio a stella, formate le vostre zeppole su una teglia rivestita di carta da forno. A questo punto infornate a 180° forno ventilato per circa 25 minuti. Una volta pronte le zeppole, lasciatele raffreddare e procedete con la crema pasticcera: prima di tutto, in un pentolino, aggiungete il latte, il burro, la scorza di limone, la vanillina e portate il tutto a sfiorare il bollore. Mescolate a parte in una terrina i tuorli con lo zucchero poi aggiungete la farina setacciata e continuate a mescolare; fate attenzione ai grumi. A questo punto, aggiungete il latte a filo nella terrina e continuate a mescolare. Trasferite il tutto in un pentolino sul fuoco e cuocete la crema fin quando non si addensa e mescolate continuamente per evitare i grumi. Una volta che la crema si è addensata, toglietela dal fuoco e togliete la scorza di limone. A questo punto, lasciate raffreddare anche la crema e cospargete le zeppole di zucchero a velo. Con l’aiuto della sac a poche bucate la zeppola e aggiungete un po’ di crema all’interno e poi aggiungetela anche sulla superficie con un movimento rotatorio. Fate questo procedimento con tutte le zeppole, adagiate sopra l’amarena e servite.
